Recipe for Royal Cuisine, "Royal Kitchen in the Corner of a Room"

 


What is <Royal Kitchen in the Corner of a Room>?

<Royal Kitchen in the Corner of a Room> is a non-face-to-face program of the World Heritage Festival Suwon Hwaseong X Suwon Hwaseong Cultural Festival, which you can enjoy at home through a guide video and a meal kit based on the Wonhaeng Eulmyojeongri Uigwe. This program was so popular that all the prepared meal kits were completely sold out.

You could experience five kinds of royal cuisine: Saeng Bok Mandu Tang, Sunjojeon, Nogdu Jang Eum Japchae, Yuja Hwachae, and Baegdu Jeomjeungbyeong with the ingredients that where prepared in advance and sold in a form of a meal kit. The advantage of <Royal Kitchen in the Corner of a Room> is that you can cook royal cuisine that is not easily available at home~!!

Even if you don't have a meal kit, you can try to cook the meals at home through a video on YouTube from the Suwon Cultural Foundation.


You can find the recipes of <Royal Kitchen in the Corner of a Room> on the YouTube channel of the Suwon Cultural Foundation. Royal Cuisine Expert Mr. Jong-Yeon Lim (Important Intangible Cultural Property No. 38, who has studied royal cuisine of the Joseon Dynasty) kindly taught us how to cook them. All recipes in the video belong to the [Sura Ilgi] of the Royal Court Food Research Council. As it is the food that King Jeongjo the Great and Crown Princess Hong ate as ‘*Sura’, please experience the royal meal by imagining our kitchen as a royal kitchen!’

#1. Saeng Bok Mandu Tang (Raw Abalone Dumpling Soup)

On the fifth day of Eulmyo trip to Hwaseong, this is the food that was included in the “Josura” of Crown Princess Hong. Enjoy abalone as a dumpling with a chewy texture.



‘Saeng Bok Mandu Tang’ is a delicacy soup in which raw abalone meat is sliced into thin slices, meat stuffing is put in the middle, lightly steamed, and then poured with hot broth. It is a dish that shows sincerity by making dumplings, rather than just boiling soup with abalone. The ingredients for raw dumpling soup are relatively easy to obtain, so if you have the ingredients, you can make it according to the recipe in the video above.


[‘Saeng Bok Mandu Tang’s Ingredients]

4 raw abalone

70g beef rump

1-2 dried shiitake mushrooms

1/2 green onion

1 tbsp pine nuts

2 tbsp cornstarch

1 egg

Dumpling Stuffing Seasoning: 2/3 tsp soy sauce, 1/2 tsp minced garlic, 1 tsp sesame oil, 2 tsp sesame salt

Beef Broth (4 Cups): 100 g beef (brisket), 7 cups water, green onion, garlic, soy sauce, salt (appropriate amount)



#2. Sunjojeon (Koran Pancakes with Quail Eggs) &

Nogdu Jang-Eum Jabchae (Mung Bean Sprouts Japchae)


On the third day of Eulmyo trip to Hwaseong, this is the food that was included in the “Juksura” of Crown Princess Hong. Sunjojeon, in particular, is a quail dish that is not easily available today.

*Juksura is a light meal with porridge before breakfast for royal family.




Sunjojeon (Koran Pancakes with Quail Eggs) is a pancake made with quail meat, beef, and minced and seasoned tofu shaped into balls. Nogdu Jang-Eum Jabchae (Mung Bean Bean Sprouts Japchae) is a seasoned vegetable meal made with bean sprouts as the main ingredient, bamboo shoots, water parsley, and roasted beef. Even now, quail meat is still sold in the market, so if you are looking for a special dish, how about Sunjojeon?


[Sunjojeon’s Ingredients]

3 quails (300g)

50g beef (beef rump or round)

50g tofu

2 eggs

1/2 cup flour

a little bit of oil

Meat Seasoning: 1 tsp soy sauce, a little bit of salt, 2 tsp chopped green onion, 1 tsp minced garlic, 1/2 tsp ginger juice, 1 tsp sesame salt, 1 tsp sesame oil, 1/2 tsp pepper powder


[Nogdu Jang-eum Jabchae’s Ingredients]

150g bean sprouts

50g water parsley

2 dried shiitake mushrooms

100g beef (beef rump or round)

50g bamboo shoots (dried or pickled)

1 tbsp sesame oil, 1 tsp sesame salt, a little bit of salt

Meat and Mushroom Seasoning: 1 tbsp soy sauce, 1 tsp honey, 2 tsp minced green onion, 1 tsp minced garlic, 1 tsp sesame salt, 1 tsp sesame oil

Herb Seasoning: 1 tsp salt, 2 tsp sesame salt, 1tsp minced green onion, ½ tsp minced garlic, 1/2 tsp sesame oil



#3. Baegdu Jeomjeungbyeong

(White Red Bean Paste Rice Cake) & Yuja Hwachae


This is a fruit salad that was eaten as a snack in the royal family, and is made with white red bean paste and citron.
From the savory yet slightly sweet steamed rice cake, to the fresh fruit salad, it's a great dessert to eat even these days.


Baegdu Jeomjeungbyeong (White Red Bean Paste Rice Cake) a rice cake made by mixing glutinous rice flour with chestnuts, jujube and dried persimmon, topped with white red bean paste, and steaming thinly and flat in a steamer or bamboo steamer. When cooking at home, you need to have a steamer (Sambali) and a wet cotton cloth in order to steam the rice cakes properly. Yuja Hwachae is a drink made by slicing citron and pears into thin slices and putting them in honey water and floating pomegranates. Yuja Hwachae has a beautiful color and is characterized by a fragrant aroma and taste of citron.

[Baegdu Jeomjeungbyeong’s Ingredients]

7 cups sticky rice flour

7 tbsp honey

7 chestnuts

10 jujubes

2 dried persimmons

1 cup red beans

1/2 teaspoon salt

You need cotton cloth to make rice cakes.



[Yuja Hwachae Ingredients]

1 citron

1/2 pear

1/4 pomegranate

1 tbsp pine nuts

Since yellow citron is a seasonal ingredient that is only sold temporarily,

it is safe to substitute it with other ingredients that can be purchased.
